Summer in Katy
With whatever rain we get during this season of hurricanes, the fat birds in the trees outside my kitchen window and I are as happy as we can be. Having spent summers in Palm Desert, hiking the Bump and Grind Trail with my friend Pam and her dog Sasha Lee at 5:30am in 90 degree "dry" heat, this torrid, humid Houston summer is for me.
This summer brings more new adventures for this busy chef. I'm trying out new recipes and building a portfolio for my business. I can "say" I make wedding cakes but a bride has to see to believe. Of course I'm not a professional just passionate and able so my first few were heart stopping. It turns out that there's nothing easy about making a wedding cake, but if you like intense drama, this is it! (those of you who do this for a living laugh, I know)
My brides and their guests were thrilled with the tastes and designs as I looked on seeing 100 things wrong! I remember my dear daughters and all the experimenting I did with their birthday cakes. It was a worthwhile journey but they had to suffer a few disasters.
I'm making my own puff pastry for appetizers and desserts. It turns out that the pastry I make for all my pies and quiche are just a few steps away from spectacular and delicious! I discovered that puff pastry made with good butter is so much better than the commercial brands that use shortening. No wonder we all love French pastry.
I've been experimenting with bread too. I want quick baguettes that can be assembled in one day, frozen un-baked, defrosted, baked and ready for a dinner in record time. I have 6 in my freezer and I have to stop or I'll have no room for cake and stock! My friends and family have so much bread.....
I look forward to fall as I make endless Roasted Heirloom Tomato Soup and Zucchini Vichyssoise. Order some with homemade bread and swoon.
